My husband spent time in Mexico for several months. I was born and raised in Texas. We know tortillas, and these tortillas are legit.
Legit as in, Eric took his first bite of tortilla warm off the griddle and said, “Wow, this is how they taste in Mexico.” Triumph! Grocery store tortillas, even the “homestyle” variety, are made with soybean oil along with a host of funky stabilizers. Uh, yum? My idea of delicious, authentic tortilla fat is bacon grease (lard is more authentic, but that’s dang hard to find), so that’s what I did here. And all was right in the new year.
Speaking of…Happy New Year! We spent NYE the way we party animals do best: at home watching Fergie show off her toned thighs on New Year’s Rocking Eve. We drank champagne, we viewed tons of backyard fireworks lighting up the sky (it’s even legal here), and we stayed up deliciously late for a Wednesday. Love it!
So pillowy soft and pliable. We made breakfast burritos with these for our first meal in 2015, with nary a cracked tortilla in sight. YOM.
I know I said I don’t believe in resolutions, but I’ve caved with two biggies:
- Eat healthier, which oops, means less cakes and cookies on the blog, too (I can’t just sample one bite for testing purposes…get outta here). Hopefully this yields yays instead of nays.
- Save money for a house fund. !!!
