Holiday cookie time! Oh man, I do hope I’ll be able to bring more holiday cookies to you before January 1st. Because starting New Years Day…it’s back to more roasted vegetables. Resolutions demand it!
Speaking of resolutions, am I the only one who just doesn’t bother with them? They’re probably a good idea (at least for the 2 months when one remembers them), but my laze gets in the way. Have you ever been to a gym in January? A roomful of resolutions mean 15 minute waits for the elliptical, yo!
Ever been in December, though? 😉 I think we all just have too many more fabulous things to do by the end of the year. Like parties…and cookie baking…and my favorite, cookies AT parties.
These Glazed Pineapple Cookies make me happy because I always affiliate them with parties. The first time I made them was with a best bud years ago, when we had a cookie party. You know cookie baking parties, yes? Multiple people come together to make a handful of cookie recipes, then we all go on our merry way with a portion of each of the prepared goods. (Pinch of Yum, my gurl in my mind, just did a fabulous post on how to host a cookie party of perfection.)
These cookies at our baking party were so good that I have NO recollection of the other cookies we made. I do, however, recall that these taste evilly delicious while frozen. Freezing treats is typically my Jedi mind trick – if you want to eat them, you have to poke around the freezer and thaw before enjoying. These cookies? All you have to do is open the freezer bag that’s sitting front and center (because you keep repeating this process), insert in mouth, and enjoy the soft, albeit cold, deliciousness.
Party cookies, part 2: I also brought these to the awesome sangria competition party I just attended. We ate grapes (err, sort of) AND pineapple. How virtuous!
PS: Nope, I didn’t win the sangria competition. It seems that red sangria would have brought in more votes (but, but, apple cider white sangria!). Sniffles. Have I mentioned I’m competitive?
