More Christmas cookies, as promised!
I think my favorite thing about cookies is that you can gorge on multiples without feeling bad about it. Two slices of cake in a several hour time span earns you a scornful head shake, but three cookies in as many hours? Fine and dandy.
Add to that the fact that these cookies have no added fat and no gluten? Shoot, that’s practically healthful for this time of year. Don’t worry, they aren’t dry from the lack of oil/butter – they’re super fudgy and chewy, and the walnuts provide all the fat cookies need (with a big dose of omega-3). And if you’re like me, not a huge fan of nuts in your cookies, don’t run away yet! Since the walnuts are toasted and their texture jives with the cookies so well, most people don’t even realize they’re eating nuts until they inspect the cookies. Fun inspection.
Happy Hanukkah to my peeps – it’s the third crazy night tonight. I plowed through my Christmas list like a champ today, and feel SO much better. Major phew. My parents told me to stop worrying about presents, and just come visit for fun and food. I can get behind that…Christmas dinner! We basically recreate Thanksgiving dinner exactly, except the color scheme is red instead of brown. What’s better than having one epic meal a year? Having two.
